Both are solid beginner barbell programs; Starting Strength runs 3 lifts of 5, StrongLifts adds rows for more back volume.
Either works well for a beginner and the differences are small. Starting Strength uses 3 sets of 5 on squat, bench, press, and deadlift with a power clean option. StrongLifts 5x5 does five sets of five and swaps the clean for barbell rows, giving more back and pulling volume. Pick StrongLifts if you want more sets and rows, Starting Strength if you prefer fewer, heavier sets and coaching detail.

Linear session to session progress ends for everyone within a few months. When your lifts stall repeatedly, run the built in deload, then move to an intermediate program rather than grinding.
